Ingredients
  

  • ¾ cup butter softened
  • 1 cup sugar
  • 1 egg
  • ¼ cup molasses
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • ½ tsp cloves
  • ½ tsp salt
  • Extra sugar for rolling

Instructions
 

Prepare the Oven and Tray

  • Preheat your oven to 350°F (175°C).
  • Line baking sheets with parchment paper.

Cream Butter and Sugar

  • In a bowl, beat the butter and sugar until light and fluffy.

Add Egg and Molasses

  • Mix in the egg and molasses until smooth.

Mix Dry Ingredients

  • In another bowl, whisk flour, baking soda, cinnamon, ginger, cloves and salt.

Combine Wet and Dry Mixtures

  • Slowly add the dry mix to the wet mix.
  • Blend until you have a soft dough.

Shape the Cookies

  • Roll the dough into small balls (about 1 inch).
  • Roll each ball in sugar for a crackly top.

Bake the Cookies

  • Place balls on the baking sheet.
  • Bake for 9–11 minutes.
  • The cookies will be soft when they come out — they firm up while cooling.

Cool and Serve

  • Let cookies cool on a rack.
  • Serve warm or store for later.

Notes

  • Don’t overbake; they stay soft and chewy.
  • Rolling in sugar gives the classic crackle look.
  • Use dark molasses for deeper flavor.
