Ingredients
  

  • 1 pound salted cod fish
  • 1 small red onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 tomato chopped
  • 1 cucumber sliced
  • 1/4 cup black olives
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon black pepper
  • 1 avocado sliced

Instructions
  

Soak the Salted Cod

  • Place salted cod fish in cold water overnight. Change the water two or three times to remove extra salt from the fish properly.

Boil the Fish

  • Place soaked cod fish into a saucepan with fresh water. Boil gently for about 10 minutes until the fish becomes tender and soft.

Drain and Cool

  • Remove the fish carefully from hot water. Drain it well using a colander and let it cool before handling or shredding.

Shred the Cod Fish

  • Use clean hands or a fork to shred the fish into small pieces. Remove any bones or skin carefully while shredding.

Prepare the Vegetables

  • Slice onion, bell peppers, cucumber and tomato into thin pieces. Fresh vegetables give the salad color, crunch and refreshing flavor.

Make the Dressing

  • In a small bowl, combine olive oil, lemon juice and black pepper. Stir well until the dressing becomes smooth and flavorful.

Combine Salad Ingredients

  • Place shredded cod fish and all vegetables into a large bowl. Add olives and fresh parsley for extra flavor and freshness.

Toss the Salad

  • Pour the dressing over the salad mixture carefully. Toss gently until all ingredients become coated evenly with the fresh dressing.
