Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 pound beef or chicken cubed
  • 6 cups beef or chicken broth
  • 1 can diced tomatoes
  • 1 cup potatoes diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 cup pasta or rice
  • 1/2 cup fresh parsley chopped

Instructions
 

  • Heat oil in a big pot on medium heat.
  • Add onions and garlic. Cook until soft.
  • Put in carrots and celery. Cook for three minutes.
  • Add meat. Brown it on all sides.
  • Pour in the broth. Let it boil.
  • Stir in tomatoes and potatoes.
  • Add salt, pepper, oregano, and paprika.
  • Cover and cook for 30 minutes.
  • Add pasta or rice. Cook until soft.
  • Stir in parsley. Serve hot.
