Ingredients
  

  • Cooked white rice – 3 cups cold
  • Eggs – 2 large beaten
  • Chicken breast – 1 cup cooked and diced
  • Oil – 2 tablespoons
  • Green onions – 3 stalks chopped
  • Garlic – 2 cloves minced
  • Frozen peas and carrots – 1 cup
  • Soy sauce – 2 tablespoons
  • Salt – ½ teaspoon

Bang Bang Sauce

  • Mayonnaise – ¼ cup
  • Sweet chili sauce – 3 tablespoons
  • Sriracha – 1 tablespoon
  • Honey – 1 teaspoon

Instructions
 

Make the sauce

  • Mix mayonnaise, sweet chili sauce, sriracha and honey. Stir until smooth. Set aside for later use.

Scramble the eggs

  • Heat one tablespoon oil in pan. Add eggs. Stir gently until just cooked. Remove eggs and keep aside.

Cook garlic and vegetables

  • Add remaining oil to pan. Add garlic, peas and carrots. Cook until soft and fragrant.

Add chicken

  • Add cooked chicken to pan. Stir well. Cook until heated and lightly golden.

Add rice

  • Add cold rice to pan. Break clumps gently. Stir fry until rice feels hot and dry.

Season the rice

  • Pour soy sauce over rice. Add salt. Stir well to coat every grain evenly.

Add eggs and sauce

  • Return eggs to pan. Add Bang Bang sauce. Mix gently until rice looks creamy and glossy.

Finish and serve

  • Add green onions. Stir once more. Turn off heat. Serve hot and fresh.

Notes

  • Use cold rice for best texture.
  • Adjust spice by adding more or less sriracha.
  • Do not overmix after adding sauce.
  • Use shrimp instead of chicken if desired.
  • Cook on medium-high heat for best results.
