Ingredients
  

  • 3 pounds sirloin tip roast
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • 1 tablespoon Dijon mustard

Instructions
 

Step 1:

  • Preheat oven to 425°F (220°C).

Step 2:

  • Mix olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, and mustard.

Step 3:

  • Rub the mix all over the roast.

Step 4:

  • Place the roast on a rack in a roasting pan.

Step 5:

  • Roast for 15 minutes to sear the outside.

Step 6:

  • Reduce oven temperature to 325°F (160°C).

Step 7:

  • Cook for 1 hour and 30 minutes or until it reaches 135°F inside.

Step 8:

  • Remove and cover loosely with foil.

Step 9:

  • Let it rest for 15 minutes.

Step 10:

  • Slice thinly and serve warm.
