Ingredients
  

  • 2 cups fresh basil leaves packed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts
  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 teaspoon lemon juice

Instructions
 

Toast the Pine Nuts

  • Place pine nuts in a dry skillet over medium heat. Toast for 2–3 minutes until golden. Stir frequently to avoid burning and enhance their nutty flavor.

Prepare Basil and Garlic

  • Wash basil leaves and pat dry. Peel garlic cloves. This ensures a fresh, aromatic flavor without bitterness or grit.

Blend Ingredients

  • Add basil, pine nuts, garlic, Parmesan, salt and pepper to the food processor. Pulse until finely chopped. The mixture should be evenly combined.

Add Olive Oil

  • Slowly pour in olive oil while blending. Blend until smooth and creamy. Stop occasionally to scrape sides for even texture.

Taste and Adjust

  • Taste the pesto. Add lemon juice, extra salt or pepper if needed. Adjust until flavor is balanced and fresh.

Serve or Store

  • Use immediately with pasta, sandwiches or as a dip. Or store in an airtight container in the fridge.
