- 1 lb ground beef
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
- ¼ cup tomato sauce
- 8 –10 flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup enchilada sauce store-bought or homemade
Optional Toppings:
- Chopped fresh cilantro
- Diced tomatoes
- Sliced black olives
- Sour cream
- Jalapeño slices
Cook the Beef
Heat a skillet over medium heat.
Add onions and garlic and sauté until soft.
Add ground beef and cook until browned.
Stir in chili powder, cumin, paprika, salt, pepper, and tomato sauce.
Set aside.
Assemble the Enchiladas
Place 2–3 tablespoons of beef mixture in the center of each tortilla.
Sprinkle generously with cheese.
Roll up and place seam-side down in a greased baking dish.
Garnish and Serve
Let enchiladas rest 5 minutes.
Top with cilantro, diced tomatoes, olives or a dollop of sour cream.
Serve hot.
- Don’t overfill tortillas — prevents tearing.
- Warm tortillas before rolling for easy handling.
- Use plenty of sauce for extra flavor.
- Be generous with cheese — it melts perfectly.
