Ingredients
  

  • 1 cup almond flour
  • 1 ¾ cups powdered sugar
  • 3 large egg whites room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • Food coloring optional
  • Filling of choice buttercream, ganache, or jam

Instructions
 

Step 1: Sift dry mix

  • Sift almond flour and powdered sugar into a bowl.

Step 2: Whip egg whites

  • In another bowl, beat egg whites until foamy. Add granulated sugar slowly.

Step 3: Make stiff peaks

  • Whip until glossy stiff peaks form. Add vanilla and color if desired.

Step 4: Fold mixture

  • Gently fold dry ingredients into whipped egg whites using spatula.

Step 5: Pipe shells

  • Transfer batter into piping bag. Pipe small circles onto parchment paper.

Step 6: Rest shells

  • Let piped batter sit for 30 minutes until tops are dry.

Step 7: Bake

  • Bake at 300°F for 15 minutes until shells rise and firm.

Step 8: Cool and fill

  • Cool shells fully. Add buttercream, ganache, or jam between two shells.
