Ingredients
  

  • 4 dried guajillo chilies stems removed
  • 2 dried ancho chilies stems removed
  • 2 dried pasilla chilies stems removed
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 4 garlic cloves
  • 1 teaspoon salt

Instructions
 

Toast the Chilies

  • Heat a dry skillet over medium heat. Toast guajillo, ancho and pasilla chilies lightly for two minutes until aromatic.

Toast the Spices

  • Add cumin seeds and black peppercorns to the pan. Toast for one to two minutes until fragrant, careful not to burn.

Prepare Chilies for Grinding

  • Remove toasted chilies from pan. Let them cool slightly. Then cut off stems and remove seeds for milder flavor.

Blend Chilies and Spices

  • Add toasted chilies, cumin, pepper, oregano, cinnamon, cloves and salt to a blender or spice grinder.

Add Garlic

  • Peel garlic cloves and add to the blender. This gives the seasoning its signature depth and richness.

Grind into Powder

  • Grind all ingredients until you get a fine, uniform powder. Check for any large pieces and re-grind if needed.

Store the Seasoning

  • Transfer the seasoning to an airtight container. Keep it in a cool, dry place for up to six months.

  • Toasting spices releases more aroma and depth.
