Ingredients
  

  • 2 cups Bisquick baking mix
  • 1 cup milk
  • 2 large eggs
  • 2 ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar optional
  • 1 tablespoon melted butter or oil
  • Butter or oil for cooking

Instructions
 

Mash the Bananas

  • Peel the bananas and place them in a bowl. Mash with a fork until smooth. Small lumps are fine. Ripe bananas give better sweetness and flavor.

Mix the Wet Ingredients

  • Add milk, eggs, vanilla extract and melted butter to the mashed bananas. Whisk until everything is well combined and smooth.

Add the Bisquick

  • Pour Bisquick baking mix into the wet mixture. Stir gently until just combined. Do not overmix. A few lumps in the batter are completely fine.

Heat the Pan

  • Place a non-stick skillet on medium heat. Add a small amount of butter or oil. Let it heat for about one minute.

Cook the Pancakes

  • Pour about ΒΌ cup batter onto the hot skillet. Cook until bubbles form on top. Flip carefully and cook the other side until golden brown.

Serve Warm

  • Remove pancakes from the pan and place on a plate. Repeat with remaining batter. Serve warm with your favorite toppings.
