Ingredients

  • 4 oz fresh goat cheese
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch optional, for thickening
  • 1 tablespoon water
  • Fresh mint leaves for garnish
  • Crackers or toasted bread for serving

Instructions

Make the Blueberry Sauce

  • Add blueberries, honey, and lemon juice to a small saucepan. Cook over low heat until the blueberries soften. If the sauce is too thin, mix cornstarch and water, then stir it in. Cook for two more minutes until thick.

Prepare the Goat Cheese

  • Place the goat cheese in a small bowl. Let it soften at room temperature for a few minutes.

Combine the Mixture

  • Pour the warm blueberry sauce over the goat cheese. Gently swirl it with a spoon. Do not mix fully; the swirl look is beautiful.

Chill and Serve

  • Refrigerate for 10–15 minutes to firm it slightly. Serve with crackers, toasted baguette slices, or apple wedges.

Notes

  • Use fresh goat cheese for smooth texture.
  • Do not overheat the blueberries. It can make them bitter.
  • Add a pinch of salt for better balance.
  • Try using different berries like raspberries or blackberries.
  • Serve slightly chilled for the best flavor.
