Ingredients

  • 4 cube steaks
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • 2 large eggs
  • ½ cup milk
  • Vegetable oil for frying

For the Gravy

  • 2 tablespoons pan drippings
  • 2 tablespoons flour
  • 1 ½ cups milk
  • Salt and pepper to taste

Instructions

Prepare the Steaks

  • Place steaks on a board. Pat them dry with paper towels. This helps the coating stick better while frying.

Season the Flour

  • In a bowl, mix flour, salt, pepper, paprika and garlic powder. Stir well so flavors spread evenly.

Make Egg Mixture

  • In another bowl, whisk eggs and milk together. This mixture helps the flour stick to the steak.

Coat the Steaks

  • Dip each steak into flour first. Then dip into egg mixture. Coat again with flour. Press gently for even coating.

Heat the Oil

  • Heat oil in a large skillet over medium heat. Oil should be hot but not smoking before frying.

Fry the Steaks

  • Carefully place steaks in hot oil. Fry each side for four minutes until golden and crispy.

Drain the Steaks

  • Remove steaks from skillet. Place them on paper towels. Let extra oil drain while you make gravy.

Start the Gravy

  • Leave two tablespoons drippings in skillet. Add flour. Whisk constantly over medium heat until lightly golden.

Add the Milk

  • Slowly pour milk into skillet. Whisk nonstop to avoid lumps. Cook until gravy thickens nicely.

Season the Gravy

  • Add salt and pepper to taste. Stir well. The gravy should look smooth and creamy.

Serve Hot

  • Place steaks on plates. Spoon warm gravy on top. Serve immediately for best flavor and texture.

Notes

  • Use cube steak for tender results.
  • Keep oil at medium heat.
  • Do not overcrowd the skillet.
  • Whisk gravy constantly.
  • Serve right after cooking.
