Ingredients
  

  • 2 large chicken breasts butterflied and pounded thin
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs preferably Italian-style
  • ½ cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ cup olive oil for frying
  • Fresh basil leaves for garnish

Prepare the Chicken

  • Place chicken breasts on a cutting board. Pound them to even thickness. Season both sides with salt, pepper, garlic powder and oregano. This step ensures even cooking and better flavor in every bite.

Set Up Breading Station

  • Take three bowls. Add flour in one bowl. Beat eggs in another bowl. Mix breadcrumbs and Parmesan cheese in the third bowl. This setup makes coating easy and quick.

Coat the Chicken

  • Dip each chicken piece in flour first. Then coat in beaten eggs. Finally, press into breadcrumb mixture. Make sure it is fully coated. This gives a crispy crust.

Fry the Chicken

  • Heat olive oil in a skillet over medium heat. Fry chicken pieces until golden brown. Cook each side for about 3–4 minutes. Do not overcrowd the pan.

Preheat the Oven

  • Set your oven to 400°F (200°C). This temperature helps melt cheese and finish cooking the chicken perfectly without drying it.

Add Sauce and Cheese

  • Place fried chicken in a baking dish. Spoon marinara sauce on top. Add mozzarella cheese evenly. This layer creates a rich and cheesy topping.

Bake the Chicken

  • Put the baking dish in the oven. Bake for 15 minutes. Cheese should melt and bubble. The chicken should be fully cooked inside.

Garnish and Serve

  • Remove from oven and let it rest for a few minutes. Garnish with fresh basil leaves. Serve hot for best taste and texture.
