Ingredients

  • All-purpose flour – 1 cup
  • Eggs – 2 large
  • Milk – 1 ½ cups
  • Melted butter – 2 tablespoons
  • Sugar – 1 tablespoon
  • Salt – ¼ teaspoon
  • Vanilla extract – 1 teaspoon

Instructions

Mix the Batter

  • Add flour, eggs, milk, butter, sugar, salt and vanilla to a bowl. Whisk until smooth and thin.

Rest the Batter

  • Let the batter rest for ten minutes. This helps the crepes cook evenly and stay soft.

Heat the Pan

  • Heat a nonstick pan over medium heat. Lightly grease it with butter or cooking spray.

Pour the Batter

  • Pour a small ladle of batter into the pan. Tilt the pan quickly to spread it evenly.

Cook the Crepe

  • Cook for about one minute until edges lift slightly. The bottom should look lightly golden.

Flip Carefully

  • Flip the crepe gently using a spatula. Cook the other side for thirty seconds.

Remove and Repeat

  • Remove the crepe and place it on a plate. Repeat with remaining batter until finished.

Notes

  • Use a blender for very smooth batter.
  • Keep the heat medium to avoid burning.
  • Use a thin layer of batter for best texture.
  • Stack cooked crepes to keep them warm.
  • Do not overcook or they become dry.
