Ingredients
  

  • 1 pound medium shrimp peeled and deveined
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 egg beaten
  • ¼ cup milk
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

For the Boom Boom Sauce:

  • ½ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon lemon juice

Instructions
  

Prepare the Shrimp

  • Rinse shrimp under cold water. Pat dry with paper towels. Make sure they are clean and ready for battering.

Make the Coating

  • In a bowl, mix flour, salt, black pepper and garlic powder. In another bowl, whisk egg and milk together.

Coat the Shrimp

  • Dip each shrimp in the flour mixture, then egg mixture and finally coat with panko breadcrumbs. Ensure each shrimp is fully coated for crunchiness.

Heat the Oil

  • Pour vegetable oil into a frying pan or deep fryer. Heat until oil reaches 350°F (175°C). Use thermometer for accuracy.

Fry the Shrimp

  • Carefully place shrimp into hot oil. Fry 2-3 minutes until golden brown. Remove with slotted spoon and drain on paper towels.

Prepare the Sauce

  • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lemon juice. Adjust spice to your preference.

Toss Shrimp in Sauce

  • Place fried shrimp in a large bowl. Pour Boom Boom sauce over shrimp. Toss gently until evenly coated. Serve immediately.
