Ingredients
  

  • 6 small flour tortillas
  • 1/2 pound breakfast sausage
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp butter or oil
  • Optional: salsa or hot sauce for serving

Instructions
 

Cook the Sausage

  • Heat a skillet over medium heat. Cook sausage, breaking into small pieces until fully browned.

Scramble the Eggs

  • In a bowl, whisk eggs, milk, salt and pepper. Melt butter in skillet. Add eggs and stir gently.

Mix Sausage and Eggs

  • Combine cooked sausage with scrambled eggs. Mix well so every bite has sausage and egg.

Prepare Tortillas

  • Lay tortillas flat. Add a spoonful of sausage and egg mixture in the center of each.

Add Cheese

  • Sprinkle shredded cheddar over the filling. Cheese makes the taquitos gooey and flavorful.

Roll the Taquitos

  • Fold in sides and roll tortillas tightly. Ensure filling is secure inside the roll.

Place on Baking Sheet

  • Line a baking sheet with parchment paper. Place taquitos seam side down to prevent unrolling.

Bake Until Crisp

  • Preheat oven to 400°F (200°C). Bake taquitos for 15–20 minutes until golden brown.

Cool Slightly

  • Remove taquitos from oven. Let them cool for 2–3 minutes before serving.

Serve and Enjoy

  • Serve warm with salsa, hot sauce or your favorite breakfast sides. Enjoy the crispy, cheesy goodness.
