Ingredients

  • 10 cups popped popcorn
  • 1 cup sugar
  • ½ cup butter
  • ¼ cup water
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

Prepare the Popcorn

  • Pop your popcorn using a popcorn maker or stovetop method.

Remove unpopped kernels.

  • Place popcorn in a large mixing bowl.

Make the Toffee Syrup

  • In a saucepan, add sugar, butter, water, and a pinch of salt.
  • Cook on medium heat until the mixture melts.
  • Bring to a boil and cook for 4–5 minutes without stirring.
  • The mixture should turn light golden.

Add Vanilla and Baking Soda

  • Turn off the heat.
  • Add vanilla and baking soda.
  • The mixture will bubble — this is normal.
  • Stir quickly.

Coat the Popcorn

  • Pour the hot toffee mixture over the popped popcorn.
  • Stir gently until all popcorn is coated evenly.

Bake for Crispiness

  • Spread the coated popcorn on a baking sheet.
  • Bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes.
  • This step makes the toffee crunchy.

Cool and Break Apart

  • Let the popcorn cool completely.
  • Break apart any large clusters.

Notes

  • Do not skip baking — it makes the popcorn crisp.
  • Use fresh, warm popcorn so the coating sticks better.
  • Keep stirring the toffee quickly before it sets.
  • Add nuts like almonds or pecans for extra crunch.
  • Store in an airtight container to keep it crisp.
