Ingredients

  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 cup pecans halves
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

Prepare the Caramel Base

  • In a saucepan, melt butter on low heat. Add brown sugar and cream. Stir until smooth and thick. Pour this caramel into the greased Bundt pan. Spread evenly at the bottom.

Add the Pecans

  • Place pecan halves over the caramel layer. Arrange them nicely. This will be the top after flipping. Try to cover the surface evenly for a beautiful finish.

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease the Bundt pan well. This step helps the cake release easily after baking. Do not skip this important step.

Mix Dry Ingredients

  • In a bowl, add flour, baking powder, baking soda and salt. Mix well with a whisk. This ensures even distribution of rising agents in the cake batter.

Prepare Wet Ingredients

  • In another bowl, beat eggs and sugar until light. Add milk, oil and vanilla extract. Mix until smooth. This creates a soft and moist cake base.

Combine the Batter

  • Slowly add dry ingredients into wet mixture. Mix gently until smooth. Do not overmix. Pour the batter over the pecan caramel layer in the pan evenly.

Bake the Cake

  • Place the pan in the oven. Bake for 45 minutes or until a toothpick comes out clean. The cake should be golden and firm on top.

Cool and Flip

  • Let the cake cool for 15 minutes. Place a plate over the pan. Carefully flip it upside down. Lift the pan slowly. The caramel pecan topping will be on top.

Notes

  • Grease the pan well to avoid sticking.
  • Do not overmix the batter.
  • Use fresh pecans for best flavor.
  • Let the cake cool before flipping.
  • Add a pinch of cinnamon for extra warmth.
  • Serve slightly warm for best taste.
