Ingredients
  

  • 1 head cauliflower cut into florets
  • 1 small onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups chicken broth or vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

Step 1: Cook the Vegetables

  • Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until soft. Add cauliflower florets and stir well.

Step 2: Add Flour

  • Sprinkle flour over the vegetables. Stir to coat everything evenly. This helps make the soup thick and creamy later.

Step 3: Pour in Broth

  • Slowly add chicken broth while stirring. Let the soup simmer for 15 minutes, or until the cauliflower is tender.

Step 4: Blend the Soup

  • Use an immersion blender to puree the soup until smooth. You can also blend in batches using a regular blender.

Step 5: Add Milk and Cheese

  • Pour in milk and stir well. Add shredded cheddar cheese and mix until melted. Taste and adjust salt and pepper as needed.

Step 6: Serve

  • Ladle the soup into bowls. Garnish with parsley and a little extra cheese on top. Serve hot with bread or crackers.
