Ingredients
  

  • 1 pound ground beef
  • 1 package cheese tortellini 20 ounces
  • 2 cups red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Cook the Tortellini

  • Boil tortellini in salted water. Cook until tender. Drain and set aside.

Heat the Skillet

  • Heat olive oil in a skillet. Add chopped onion. Cook until soft and fragrant.

Add Garlic and Beef

  • Add garlic and ground beef. Cook until beef turns brown and crumbly.

Season the Beef

  • Add cumin, chili powder, salt and pepper. Stir well to coat evenly.

Add Enchilada Sauce

  • Pour enchilada sauce into beef. Stir gently. Let it simmer for five minutes.

Combine Tortellini

  • Add cooked tortellini to the skillet. Mix until pasta is fully coated.

Transfer to Baking Dish

  • Pour mixture into a greased baking dish. Spread evenly with spoon.

Add Cheese

  • Sprinkle cheddar and mozzarella cheese over the top generously.

  • Bake at 375°F until cheese melts and bubbles, about fifteen minutes.
