Ingredients
  

  • 1 pound ground breakfast sausage
  • 2 cups shredded cheddar cheese
  • 1 cup baking mix
  • 1 can Rotel tomatoes drained well
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

Preheat the Oven

  • Heat your oven to 375°F. Line a baking sheet with parchment paper. This prevents sticking and burning.

Drain the Rotel

  • Drain Rotel tomatoes very well. Extra liquid can make the mixture too wet.

Mix the Ingredients

  • Add sausage, cheese, baking mix, Rotel, and spices into a bowl. Mix until everything looks even.

Shape the Balls

  • Roll mixture into small balls. Each ball should be about one inch wide.

Arrange on Baking Sheet

  • Place balls on the prepared sheet. Leave space between each ball for even cooking.

Bake Until Golden

  • Bake for twenty five minutes. The tops should look golden and cooked through.

Cool Slightly Before Serving

  • Remove from oven. Let them cool five minutes. This helps them hold shape while serving.

Notes

  • Drain Rotel very well before mixing
  • Use freshly shredded cheese for best melt
  • Do not overmix the sausage mixture
  • Make balls same size for even baking
  • Serve warm for best taste
