Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup cooked ham diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1/2 cup shredded cheddar cheese
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon paprika
  • Fresh parsley for garnish

Instructions

Cook the Aromatics

  • Melt butter in a large pot over medium heat. Add chopped onion and garlic. Cook until soft and fragrant. Stir often to prevent burning and ensure even cooking.

Make the Roux

  • Add flour to the pot. Stir constantly for about one minute. This helps remove raw flour taste. The mixture will become thick and slightly golden.

Add the Broth

  • Slowly pour in chicken broth while whisking. This prevents lumps from forming. Keep stirring until the mixture becomes smooth and starts to thicken slightly.

Add Milk and Cream

  • Pour in milk and heavy cream. Stir well to combine. Let it simmer gently. The soup will become creamy and smooth with a rich texture.

Add Chicken and Ham

  • Add shredded chicken and diced ham to the pot. Stir gently. Let it cook for a few minutes so the flavors blend nicely together.

Add Cheese

  • Add Swiss and cheddar cheese slowly. Stir until fully melted. The soup will become thick, creamy and cheesy. Make sure the heat is low to avoid curdling.

Season the Soup

  • Add Dijon mustard, salt, pepper and paprika. Stir well. Taste and adjust seasoning if needed. These spices bring out the classic cordon bleu flavor.

Simmer the Soup

  • Let the soup simmer for 5–10 minutes. Stir occasionally. This helps all flavors blend together and gives a rich, comforting taste.

Serve and Garnish

  • Turn off heat and let the soup rest for a few minutes. Serve hot in bowls. Garnish with fresh parsley for color and freshness.

Notes

  • Use rotisserie chicken for quick preparation
  • Do not boil after adding cheese to avoid curdling
  • Use good quality Swiss cheese for best flavor
  • Stir often to keep the soup smooth
  • Add extra broth if soup becomes too thick
  • Taste before serving and adjust seasoning
