Ingredients
  

  • 2 cups cooked chicken shredded
  • ½ cup onion finely chopped
  • 1 clove garlic minced
  • 1 cup mashed potatoes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 egg beaten
  • 1 cup bread crumbs
  • ¼ cup flour
  • Vegetable oil for frying

Instructions
 

Prepare the Mixture

  • In a medium bowl, mix shredded chicken, mashed potatoes, onion, garlic, salt, pepper and paprika. Stir well until combined and sticky.

Shape the Croquettes

  • Take a small portion of the mixture. Shape into oval or cylindrical croquettes using your hands. Keep size uniform for even cooking.

Coat the Croquettes

  • Roll each croquette in flour, then dip in beaten egg and finally coat with bread crumbs. Make sure each croquette is fully covered.

Heat the Oil

  • Pour vegetable oil into a frying pan to cover the bottom. Heat over medium heat until hot but not smoking.

Fry the Croquettes

  • Place croquettes in hot oil carefully. Fry for 3-4 minutes per side until golden brown. Turn them gently to avoid breaking.

Drain and Serve

  • Remove croquettes with a slotted spoon. Place on paper towels to remove excess oil. Serve hot with sauce or dip.
