Ingredients
  

  • 1 pound Chicken of the Woods mushrooms
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

Step 1:

  • Wipe mushrooms gently with a wet cloth.

Step 2:

  • Cut them into thin pieces, about 1/4 inch thick.

Step 3:

  • Put all other things in a big bowl.

Step 4:

  • Add mushrooms. Mix slowly until covered well.

Step 5:

  • Cover the bowl. Let it sit for 6 to 12 hours.

Step 6:

  • Set the oven to 180°F or turn on the dehydrator.

Step 7:

  • Put mushroom pieces on a rack or tray.

Step 8:

  • Dry them for 4 to 6 hours.

Step 9:

  • Let them cool. Keep them in a closed box.

Notes

  • Wipe mushrooms clean. Don’t wash with water.
  • Don’t soak them. They will turn mushy.
  • Use low heat to keep them chewy.
  • Let them sit in sauce overnight for more taste.
  • Keep jerky in a cool and dry place.
