The Chicken Souse Recipe is a warm, tangy and comforting Caribbean dish made with chicken, onions, potatoes, spices and lots of fresh lime.

Ingredients
  

  • 2 lbs chicken wings or drumettes
  • 3 potatoes peeled and chopped
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 –2 limes juiced
  • 1 Scotch bonnet or jalapeño optional for heat
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp allspice or whole allspice berries
  • 2 bay leaves
  • 6 cups water
  • Fresh parsley or cilantro for garnish

Instructions
 

Clean and Prep the Chicken

  • Rinse chicken pieces.
  • Remove extra fat or skin if you prefer.
  • Pat dry.

Add Chicken to the Pot

  • Place chicken in a pot with water.
  • Add salt, pepper, garlic, allspice, and bay leaves.

Start Cooking

  • Bring to a boil.
  • Reduce heat and simmer for 20 minutes.

Add Vegetables

  • Add potatoes and sliced onion.
  • Cook for another 25–30 minutes until potatoes are soft.

Add Lime Juice

  • Turn off the heat.
  • Add fresh lime juice for the signature souse flavor.

Add Heat (Optional)

  • Slice Scotch bonnet or jalapeño.
  • Add a small piece for spice.

Serve

  • Garnish with parsley.
  • Serve hot in bowls.

Notes

  • Use chicken wings — they add the best flavor.
  • Do not skip the lime juice; it gives the traditional tangy taste.
  • Add peppers slowly — souse can get spicy fast.
  • Let the soup rest 10 minutes before serving for deeper flavor.
  • Add more onions for extra sweetness.
