Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 10.5 oz can cream of chicken soup
  • 1 8 oz block cream cheese, softened
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 20 oz package cheese tortellini (refrigerated or frozen)
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach optional for color and nutrition

Instructions
  

Prepare the Chicken

  • Cut the chicken into chunks or leave whole if you want to shred it later.

Add Ingredients to Crock Pot

  • Place chicken, cream of chicken soup, cream cheese, chicken broth, garlic powder, onion powder, salt and pepper in the crock pot.

Cook the Chicken

  • Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is tender.

Shred the Chicken

  • If you used whole breasts, shred the chicken with two forks. Stir it into the creamy sauce.

Add Tortellini and Cheese

  • Add the tortellini and mozzarella cheese. Stir well, cover, and cook for another 20–30 minutes on low until tortellini is soft and creamy.

Add Spinach (Optional)

  • If you like, stir in spinach during the last few minutes until wilted.

Serve Warm

  • Spoon into bowls and serve warm. Garnish with more cheese or herbs if you like.

Notes

  • Use refrigerated tortellini for faster cooking.
  • Don’t overcook the tortellini — it can get mushy.
  • Add a little Parmesan cheese for a richer flavor.
  • You can also use rotisserie chicken for a quicker version.
  • Add broccoli, mushrooms, or peas for more veggies.
