Ingredients

  • 4 large eggs
  • 2 tablespoons ricotta cheese
  • 2 tablespoons milk or cream
  • 2 teaspoons butter
  • Salt and black pepper to taste
  • 1 tablespoon fresh chives chopped
  • 2 slices of bread toasted

Instructions

Crack the Eggs

  • Crack eggs into a bowl. Add milk or cream. Whisk until the mixture is smooth and combined.

Add Ricotta

  • Add ricotta cheese to the eggs. Whisk gently until the mixture becomes creamy and smooth.

Heat the Pan

  • Place a non-stick frying pan on low heat. Add butter and let it melt slowly.

Pour Eggs in Pan

  • Pour the egg mixture into the pan. Keep the heat low for soft, creamy eggs.

Cook Slowly

  • Stir the eggs gently with a spatula. Move from edges to center for even cooking.

Add Chives

  • Sprinkle chopped chives over the eggs. Stir gently. Keep eggs soft and creamy.

Season the Eggs

  • Add salt and black pepper to taste. Stir carefully and remove from heat.

Prepare Toast

  • Toast bread slices until golden brown. Place on serving plates.

Serve Eggs on Toast

  • Spoon the soft scrambled eggs over the toast evenly. Serve immediately while warm.

Optional Garnish

  • Add extra chives or a small drizzle of olive oil for flavor and presentation.

Notes

  • Cook eggs on low heat for soft and creamy texture.
  • Stir gently to avoid overcooking.
  • Fresh chives give the best flavor, but dried can work too.
  • Use good quality ricotta for rich creaminess.
  • Serve immediately; eggs lose softness if kept too long.
