The Copycat Benihana Fried Rice is simple and tasty. It has a smoky, rich and buttery flavor. This recipe uses rice, eggs, butter, soy sauce and veggies.

Ingredients
  

  • 4 cups cold cooked rice
  • 2 large eggs beaten
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 tbsp butter
  • 3 tbsp soy sauce
  • 2 green onions chopped
  • 1 tsp garlic minced
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Heat skillet or wok on medium flame.
  • Add butter and let it melt fully.
  • Cook garlic until soft and golden.
  • Push garlic to one side of the pan.
  • Pour beaten eggs into the empty side.
  • Scramble eggs until cooked and fluffy.
  • Mix eggs with garlic and butter.
  • Add vegetables and cook until soft.
  • Add cold rice into the skillet.
  • Break rice clumps with a spoon.
  • Pour soy sauce over the rice.
  • Add salt and pepper to taste.
  • Stir fry rice until smoky and hot.
  • Add chopped green onions and stir.
  • Serve hot with your favorite sides.

Notes

  • Always use cold rice for the best texture.
  • Day-old rice works better than fresh rice.
  • Butter gives a rich and smoky flavor.
  • Do not overcook vegetables. Keep them crisp.
  • Stir fry on high heat for hibachi taste.
