Ingredients
  

  • 1 pound ground breakfast sausage
  • 3 tablespoons all-purpose flour
  • 2 ½ cups whole milk
  • ½ teaspoon salt adjust to taste
  • 1 teaspoon black pepper
  • ¼ teaspoon garlic powder optional
  • Warm biscuits for serving

Instructions
 

Cook the Sausage

  • Place a large skillet over medium heat. Add ground sausage. Break it apart using a wooden spoon. Cook until fully browned and no pink remains. Do not drain the fat.

Add the Flour

  • Sprinkle flour evenly over the cooked sausage. Stir well to coat all pieces. Cook for two minutes. This removes raw flour taste and helps thicken the gravy.

Pour in the Milk

  • Slowly pour milk into the skillet while stirring. Use a whisk to mix well. Stir constantly to avoid lumps. The mixture will look thin at first.

Simmer and Thicken

  • Keep cooking over medium heat. Stir often so it does not stick. After five to seven minutes, the gravy will thicken slowly and become smooth.

Add Seasonings

  • Add salt, black pepper and garlic powder. Stir well. Taste the gravy and adjust seasoning if needed. Cook one more minute until creamy and rich.

Serve Hot

  • Turn off the heat. Let the gravy sit for two minutes. Spoon it generously over warm split biscuits. Serve immediately while hot and fresh.

  • Do not drain sausage fat. It adds flavor.
