Ingredients
  

  • 1 pound smoked sausage sliced
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 2 cans white beans drained and rinsed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions
 

Cook the sausage

  • Heat olive oil in a pot. Add sausage slices. Cook until browned and slightly crisp. Remove and set aside.

Cook the onion

  • Add chopped onion to the same pot. Cook gently until soft and lightly golden.

Add garlic

  • Stir in minced garlic. Cook for one minute until fragrant. Do not let it burn.

Add beans and broth

  • Add white beans and chicken broth. Stir well and bring the soup to a gentle boil.

Simmer the soup

  • Lower heat and let soup simmer for fifteen minutes. This helps flavors blend nicely.

Blend part of soup

  • Mash some beans with a spoon. This makes the soup creamy without a blender.

Add cream and sausage

  • Pour in heavy cream. Add cooked sausage back to the pot. Stir gently.

Season and finish

  • Add thyme, black pepper and salt. Simmer five more minutes. Taste and adjust seasoning.

Notes

  • Use smoked sausage for deeper flavor
  • Mash beans for natural creaminess
  • Do not boil after adding cream
