Ingredients
  

  • 1/2 pound shrimp peeled and chopped
  • 1/2 pound crab meat
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons all purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1 tablespoon tomato paste
  • Fresh parsley for garnish

Instructions
 

Melt the Butter

  • Place a large pot on medium heat. Add butter. Let it melt slowly without burning.

Cook Onion and Garlic

  • Add chopped onion and garlic. Cook until soft and fragrant. Stir often for even cooking.

Add Flour

  • Sprinkle flour into the pot. Stir well. Cook for one minute to remove raw flour taste.

Add Tomato Paste

  • Add tomato paste to the mixture. Stir until smooth. This adds color and deep flavor.

Pour in Stock

  • Slowly pour seafood stock. Stir constantly to avoid lumps. Let it simmer gently.

Blend the Soup

  • Blend the soup until smooth. Use an immersion blender or transfer carefully to a blender.

Add Cream and Milk

  • Pour heavy cream and milk into the soup. Stir gently. Keep heat on low.

Add Shrimp

  • Add chopped shrimp. Cook for five minutes until shrimp turns pink and tender.

Add Crab Meat

  • Gently add crab meat. Stir softly to keep chunks whole. Cook two minutes more.

Season the Bisque

  • Add salt, pepper, paprika and thyme. Taste and adjust seasoning if needed.

Serve Hot

  • Remove from heat. Ladle into bowls. Garnish with fresh parsley before serving.
