Ingredients
  

  • Pasta shells or penne – 300 grams
  • Cajun sausage – 300 grams sliced
  • Olive oil – 1 tablespoon
  • Butter – 2 tablespoons
  • Garlic – 4 cloves minced
  • Heavy cream – 1 cup
  • Chicken broth – ½ cup
  • Cajun seasoning – 2 teaspoons
  • Smoked paprika – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Salt – to taste
  • Pepper Jack cheese – 1½ cups shredded
  • Parmesan cheese – ¼ cup
  • Fresh parsley – 2 tablespoons chopped

Instructions
 

Cook the Pasta

  • Boil pasta in salted water. Cook until tender. Drain well and set aside.

Slice the Sausage

  • Cut sausage into thin rounds. Try to keep sizes equal for even cooking.

Brown the Sausage

  • Heat oil in a pan. Cook sausage until golden. Remove and keep aside.

Make the Base

  • Add butter to same pan. Melt it slowly over medium heat.

Add Garlic

  • Add minced garlic. Stir gently. Cook until fragrant but not brown.

Pour Liquids

  • Add cream and chicken broth. Stir slowly. Let it simmer for three minutes.

Season the Sauce

  • Add Cajun seasoning, paprika, pepper and salt. Mix well and taste sauce.

Add Cheese

  • Add Pepper Jack and Parmesan cheese. Stir until sauce becomes smooth and creamy.

Combine Sausage

  • Return sausage to pan. Mix well so sausage gets coated with sauce.

Add Pasta

  • Add cooked pasta. Toss gently until pasta is fully covered with sauce.

Final Touch

  • Cook one more minute. Sprinkle parsley. Turn off heat and serve hot.

Notes

  • Use fresh grated cheese for smooth sauce.
  • Control spice by adjusting Cajun seasoning.
  • Do not boil sauce after adding cheese.
  • Use smoked sausage for best flavor.
  • Add pasta water if sauce feels thick.
