Ingredients
  

  • Olive oil – 2 tablespoons
  • Onion – 1 medium chopped
  • Garlic – 3 cloves minced
  • Canned white beans – 2 cups drained and rinsed
  • Canned diced tomatoes – 2 cups
  • Vegetable broth – 3 cups
  • Carrot – 1 small chopped
  • Dried oregano – 1 teaspoon
  • Salt – to taste
  • Black pepper – ½ teaspoon
  • Red chili flakes – ¼ teaspoon optional
  • Fresh basil – 2 tablespoons chopped
  • Lemon juice – 1 tablespoon

Instructions
 

Heat the Oil

  • Place a large pot on medium heat. Add olive oil and let it warm gently. Do not overheat the oil. This helps keep flavors fresh and balanced.

Cook Onion and Garlic

  • Add chopped onion to the pot. Cook for 4 minutes until soft. Then add garlic and cook for one minute. Stir well to avoid burning.

Add Vegetables

  • Add chopped carrot to the pot. Cook for 3 to 4 minutes. This step adds sweetness and texture to the soup. Stir occasionally for even cooking.

Add Beans and Tomatoes

  • Now add white beans and diced tomatoes. Mix everything well. Let it cook for 2 minutes. This helps blend the flavors together nicely.

Pour in Broth

  • Add vegetable broth slowly. Stir well. Bring the mixture to a gentle boil. This forms the base of your soup.

Add Spices

Blend the Soup
