Ingredients
  

  • All purpose flour – 2¼ cups
  • Baking soda – ½ teaspoon
  • Baking powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Unsalted butter – ¾ cup softened
  • White sugar – ¾ cup
  • Brown sugar – ½ cup
  • Egg – 1 large
  • Vanilla extract – 2 teaspoons
  • Toffee bits – ¾ cup
  • Granulated sugar – ¼ cup for rolling

Instructions
 

Preheat Oven and Prepare Tray

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper. This prevents sticking and helps cookies bake evenly and nicely.

Mix Dry Ingredients

  • In a bowl, add flour, baking soda, baking powder and salt. Whisk gently until mixed well. Set this bowl aside.

Cream Butter and Sugars

  • In a large bowl, beat butter until smooth. Add white sugar and brown sugar. Mix until light and fluffy in texture.

Add Egg and Vanilla

  • Add the egg to the butter mixture. Mix well until smooth. Add vanilla extract. Stir gently to combine flavors evenly.

Combine Wet and Dry Ingredients

  • Add dry ingredients slowly into the wet mixture. Mix on low speed. Stop when dough forms. Do not overmix the dough.

Fold in Toffee Bits

  • Add toffee bits to the dough. Fold gently using a spatula. Make sure toffee spreads evenly through the dough.

Shape and Roll Cookies

  • Scoop small dough portions. Roll into balls. Roll each ball in granulated sugar. Place on baking sheet with space between.

Bake Until Crackly

  • Bake cookies for twelve minutes. The tops will crack naturally. Edges should look set. Centers stay soft and tender.

Cool Before Serving

  • Remove cookies from oven. Let them rest on the tray for five minutes. Transfer to a cooling rack to cool fully.
