Ingredients
  

  • 1 lb ground beef
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 6 low-carb tortillas
  • Cooking spray or a little olive oil for brushing

Instructions
 

Cook the Beef

  • Heat olive oil in a skillet. Add ground beef, garlic powder, onion powder, chili powder, cumin and paprika. Cook until fully browned.

Season and Mix

  • Add salt and pepper to taste. Stir well. Remove from heat and let the beef mixture cool slightly.

Add Cheese

  • Mix in cheddar and mozzarella cheese. Stir until cheese melts slightly and combines with beef.

Prepare Tortillas

  • Lay low-carb tortillas on a flat surface. Spoon beef mixture evenly onto each tortilla.

Roll the Taquitos

  • Carefully roll each tortilla tightly around the filling. Place seam side down on a baking sheet lined with parchment paper.

Brush with Oil

  • Lightly brush or spray the taquitos with olive oil. This helps them become crispy in the oven.

Bake the Taquitos

  • Preheat oven to 400°F (200°C). Bake taquitos for 15-20 minutes until golden and crispy.

Serve Hot

  • Remove from oven and let cool for 2 minutes. Serve with sour cream, guacamole or keto-friendly salsa.
