Ingredients

  • 1 cup powdered sugar
  • ¾ cup almond flour
  • 2 tablespoons cocoa powder
  • 2 large egg whites
  • ¼ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • ½ teaspoon vanilla extract
  • ½ cup dark chocolate chips
  • 2 tablespoons heavy cream

Instructions

Prepare the Dry Mix

  • Sift powdered sugar, almond flour and cocoa powder together. Stir well to remove lumps and mix evenly.

Whip Egg Whites

  • Beat egg whites with cream of tartar until soft peaks form. Slowly add granulated sugar. Whip until glossy and stiff.

Fold Dry Ingredients

  • Gently fold dry mix into egg whites. Use a spatula and mix carefully to keep air in the batter.

Pipe the Macarons

  • Transfer batter to a piping bag. Pipe small circles on parchment paper. Keep space between each circle.

Rest the Macarons

  • Let macarons sit at room temperature for 20 minutes. This helps shells form a smooth skin before baking.

Bake the Macarons

  • Preheat oven to 300°F (150°C). Bake macarons for 12–15 minutes. Let them cool completely before removing.

Prepare Chocolate Ganache

  • Heat heavy cream in a saucepan. Pour over dark chocolate chips. Stir until smooth. Let it cool slightly.

Fill the Macarons

  • Pair similar-sized shells. Pipe chocolate ganache on one shell. Place the second shell on top gently.

Serve or Store

  • Enjoy macarons immediately or store in an airtight container. Keep in fridge for up to 5 days.

Notes

  • Sift dry ingredients carefully for smooth shells.
  • Do not overmix batter; it will become runny.
  • Rest macarons before baking for crisp shells.
  • Use room temperature egg whites for better peaks.
  • Pipe evenly sized circles for uniform macarons.
