Curried sausages are a warm, tasty meal for any day. This dish is quick and simple. It makes a great dinner or lunch. The curry sauce is rich and full of flavor.

Ingredients
  

  • 8 sausages your choice
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 2 tablespoons curry powder
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1 cup chicken or vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

Cook the sausages

  • Heat oil in a pan. Add sausages and cook until browned.

Remove sausages from the pan

  • Take sausages out and set aside. Keep the pan heat on.

Cook onions and garlic

  • Add onions and garlic. Sauté until soft and fragrant.

Add bell pepper

  • Add sliced bell pepper. Cook for 3 minutes.

Add curry powder and paprika

  • Sprinkle spices and stir well for one minute.

Mix in tomato paste

  • Add tomato paste and cook for 30 seconds.

Pour in broth

  • Pour broth slowly. Stir to mix with spices.

Add coconut milk and soy sauce

  • Pour coconut milk and soy sauce. Stir until smooth.

Return sausages to the pan

  • Put sausages back in the sauce. Let them simmer.

Simmer until thick

  • Cook for 10 minutes. Sauce should be thick and creamy.

Notes

  • Use mild or spicy curry powder, as you like.
  • Choose sausages with good fat content.
  • Cook sausages first for extra flavor.
  • Add a splash of lemon juice for freshness.
  • If sauce is too thick, add more broth.
  • For a richer taste, use full-fat coconut milk.
