Ingredients
  

  • 2 lbs beef stew meat cut into cubes
  • 2 onions chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup red wine optional
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons flour
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 sheet puff pastry
  • 1 egg beaten (for egg wash)

Instructions
 

Brown the beef

  • Heat oil in a pot. Add beef cubes and brown on all sides.

Sauté vegetables

  • Add onions, carrots, and celery. Cook until they soften.

Add garlic and paste

  • Stir in garlic and tomato paste. Cook for one minute.

Add flour

  • Sprinkle flour over the mixture. Stir well to coat everything.

Add liquids and herbs

  • Pour in beef broth and wine. Add thyme, rosemary and bay leaf.

Simmer the stew

  • Bring to a boil, then lower heat. Cover and simmer for 1.5 hours.

Preheat oven

  • Preheat oven to 400°F (200°C).

Fill the pie dish

  • Pour the beef filling into a pie dish. Remove the bay leaf.

Add pastry top

  • Cover with puff pastry. Trim edges and seal.

Brush with egg wash

  • Brush the pastry with beaten egg for a golden top.

Bake the pie

  • Bake for 25-30 minutes. Bake until pastry is golden.

Cool before serving

  • Let the pie rest for 10 minutes. Serve warm and enjoy.
