Ingredients
  

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 clove garlic minced
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil for brushing

Instructions
 

Step 1: Prep zucchini

  • Grate zucchini. Place in cheesecloth or towel. Squeeze out water.

Step 2: Mix ingredients

  • Add zucchini, egg, breadcrumbs, cheese, garlic, oregano, salt, and pepper into bowl. Mix well.

Step 3: Shape bites

  • Form small balls or patties with the mixture.

Step 4: Prepare baking sheet

  • Line baking sheet with parchment paper. Brush lightly with olive oil.

Step 5: Bake bites

  • Place bites on sheet. Bake at 400°F for 20 minutes. Turn halfway through for even crisp.

Step 6: Serve

  • Remove from oven. Let cool slightly. Serve warm with dipping sauce.

Notes

  • Always squeeze zucchini well to avoid soggy bites.
  • Add more breadcrumbs if the mix feels too wet.
  • Use fresh garlic for stronger flavor.
  • Serve with marinara or ranch sauce for dipping.
  • Store leftovers in an airtight box. Reheat in oven, not microwave.
