Ingredients
  

  • 2 cups cooked chicken shredded or chopped
  • 1 cup long-grain white rice
  • 6 cups chicken broth
  • 1 medium onion finely chopped
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 2 tablespoons olive oil or butter
  • Fresh parsley for garnish optional

Optional add-ins:

  • Lemon juice for extra flavor
  • Frozen peas or corn
  • Red pepper flakes for spice

Instructions
 

Prepare Vegetables

  • Chop onion, carrots, and celery. Mince the garlic. Keep all vegetables ready for cooking.

Heat the Pot

  • In a large pot, heat olive oil or butter over medium heat. This will cook the vegetables evenly.

Sauté Vegetables

  • Add onion, carrots, and celery. Cook 3–4 minutes until softened. Stir often to prevent burning.

Add Garlic

  • Add minced garlic. Cook 1 minute until fragrant. Be careful not to burn the garlic.

Pour Chicken Broth

  • Add chicken broth to the pot. Stir well and bring to a gentle boil.

Add Rice

  • Add rice to the boiling broth. Stir well so rice doesn’t stick together.

Add Seasoning

  • Add salt, black pepper, and thyme. Stir to combine. Cover the pot and reduce heat.

Simmer the Soup

  • Simmer for 15 minutes until rice is tender. Stir occasionally to prevent sticking.

Add Chicken

  • Add shredded or chopped cooked chicken. Stir well and cook 5 more minutes to heat chicken through.

Garnish and Serve

  • Remove from heat. Sprinkle fresh parsley on top. Serve hot with bread or crackers.

  • Use cooked chicken from a rotisserie for fast preparation.
  • Use long-grain rice for best texture; avoid sticky rice.
