Ingredients
  

  • 1 lb Dinty Moore beef stew meat
  • 2 tablespoons vegetable oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 potatoes diced
  • 2 cups beef broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/4 cup all-purpose flour optional for thickening

Instructions
 

Heat Oil in Pot

  • Add vegetable oil to a large pot. Heat over medium until warm.

Brown the Beef

  • Add beef chunks. Cook until all sides are browned, about 5 minutes.

Add Onion and Garlic

  • Stir in chopped onion and garlic. Cook until onions become soft and fragrant.

Add Vegetables

  • Add sliced carrots and diced potatoes. Stir well with the beef and onions.

Pour in Broth and Water

  • Add beef broth and water. Stir gently to combine everything in the pot.

Season the Stew

  • Add salt, pepper, thyme, and bay leaf. Stir to mix spices evenly.

Simmer the Stew

  • Reduce heat to low. Cover and simmer for 45 minutes, until beef is tender.

Optional: Thicken Stew

  • Mix flour with 2 tablespoons water. Stir into stew. Cook 5 more minutes to thicken.

Taste and Adjust

  • Taste the stew. Add more salt or pepper if needed. Remove bay leaf before serving.
