Ingredients
  

  • 1 cup sushi rice cooked
  • 8 oz 225 g salmon fillet
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 avocado diced
  • 1/2 cucumber diced
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste
  • Optional: pickled ginger or sriracha for serving

Instructions
 

Preheat the Oven

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Salmon

  • Place salmon on baking sheet. Brush with soy sauce and sesame oil. Sprinkle with salt and pepper.

Bake the Salmon

  • Bake salmon for 12–15 minutes until it flakes easily with a fork. Remove and let cool slightly.

Prepare the Rice

  • Cook sushi rice according to package instructions. Mix with rice vinegar and let it cool slightly.

Form Rice Cups

  • Press a small amount of rice into muffin tin or baking cups to form the base of each cup.

Add Salmon Pieces

  • Break baked salmon into small pieces. Place evenly on top of the rice in each cup.

Add Vegetables

  • Top with diced avocado and cucumber. Add sesame seeds for garnish and extra flavor.

Optional Toppings

  • Add pickled ginger or a drizzle of sriracha for extra taste and presentation.

Serve the Sushi Cups

  • Remove sushi cups carefully from tin. Arrange on a plate and serve immediately for best taste.

  • Use fresh salmon for best flavor and texture.
  • Do not overcook salmon; it should be tender and flaky.
  • Sushi rice can be prepared ahead of time and chilled.
  • Customize toppings with bell peppers, carrots, or radish.
