Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Cajun seasoning
  • ¼ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon lemon juice
  • Chopped parsley for garnish

Instructions
 

Boil the Eggs

  • Place eggs in a pot. Cover with water. Boil for twelve minutes. Turn off heat and let them rest.

Cool and Peel

  • Move eggs to cold water. Let them cool fully. Peel shells gently to keep whites smooth.

Cut the Eggs

  • Slice each egg lengthwise. Remove yolks carefully. Place yolks into a clean mixing bowl.

Mash the Yolks

  • Use a fork to mash yolks. Mash until crumbly and smooth, with no large lumps left.

Add Creamy Ingredients

  • Add mayonnaise, mustard and lemon juice. Mix until creamy and well blended.

Season the Filling

  • Add Cajun seasoning, paprika, salt and pepper. Stir gently. Taste and adjust spice if needed.

Fill the Egg Whites

  • Spoon or pipe filling into egg whites. Fill evenly for a neat look.

Garnish and Serve

  • Sprinkle paprika and parsley on top. Chill slightly before serving for best flavor.
