Ingredients

  • 2 cups fresh pineapple chunks
  • 3 jalapeño peppers seeded and chopped
  • 1 1/2 cups sugar
  • 1/2 cup apple cider vinegar
  • 1 packet fruit pectin about 1.75 oz
  • 1/2 teaspoon salt

Instructions

Blend the Pineapple

  • Place pineapple chunks in a blender. Blend until smooth but slightly thick. Do not overblend. You want some texture for the jelly.

Prepare the Jalapeños

  • Wash jalapeños and remove seeds for less heat. Chop them finely. This helps spread the spice evenly in the jelly.

Combine Ingredients

  • In a saucepan, add pineapple puree, chopped jalapeños, sugar and apple cider vinegar. Stir well to combine all ingredients evenly before cooking.

Cook the Mixture

  • Place the saucepan on medium heat. Bring the mixture to a boil. Stir often to prevent sticking and burning at the bottom.

Add Pectin

  • Once boiling, add fruit pectin and salt. Stir continuously for 2–3 minutes. This helps the jelly thicken properly.

Test the Consistency

  • Check if the jelly thickens slightly. It will set more as it cools. Do not overcook or it may become too thick.

Fill the Jars

  • Carefully pour hot jelly into sterilized jars. Leave a little space at the top. Seal tightly with lids.

Cool and Store

  • Let jars cool at room temperature. The jelly will set as it cools. Store in fridge or pantry depending on use.

Notes

  • Adjust jalapeño amount for spice level
  • Always use fresh pineapple for best taste
  • Stir constantly while cooking
  • Do not skip pectin for proper texture
  • Use gloves when handling jalapeños
  • Let jelly cool fully before using
  • Store in clean, dry jars
