Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup eggnog
  • 1 cup mixed dried fruits raisins, cranberries, chopped apricots
  • 1/2 cup chopped nuts optional

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.

Mix Dry Ingredients

  • In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir well.

Cream Butter and Sugar

  • In a large bowl, beat butter and sugar until light and fluffy using a whisk or spoon.

Add Eggs and Vanilla

  • Add eggs one at a time, beating well. Stir in vanilla extract until fully combined.

Combine with Dry Ingredients

  • Gradually add dry ingredients to the butter mixture. Mix gently until just combined; do not overmix.

Add Eggnog

  • Pour in eggnog slowly while stirring. This will make the batter smooth and slightly thick.

Fold in Fruits and Nuts

  • Add dried fruits and nuts. Fold gently with a spatula to distribute evenly.

Pour Batter into Pan

  • Transfer batter to prepared loaf pan. Smooth the top with a spatula evenly.

Bake the Bread

  • Bake for 50 minutes or until a toothpick inserted comes out clean.

Cool the Bread

  • Remove bread from oven. Let cool in pan for 10 minutes. Transfer to wire rack to cool completely.

Slice and Serve

  • Slice bread into 12 pieces. Serve as breakfast, snack or dessert. Enjoy the festive flavors.

  • Use room temperature butter and eggs for best texture.
  • Don’t overmix batter to keep bread soft.
