Ingredients

  • 2 cups white sugar
  • 1 cup water
  • 1 cup light corn syrup
  • 1 teaspoon cinnamon oil
  • Red food color
  • Powdered sugar

Instructions

Prepare the Pan

  • Line a baking sheet with parchment paper. Make sure it sits flat.

Add Ingredients to Pan

  • Add sugar, water, and corn syrup to the saucepan. Stir gently until dissolved.

Heat the Mixture

  • Place the pan on medium heat. Let it cook without too much stirring.

Watch the Temperature

  • Heat the mixture until it reaches 300°F. This is the hard-crack stage.

Add Red Color

  • Remove the pan from heat. Add red food color and stir well.

Add Cinnamon Oil

  • Add cinnamon oil carefully. The smell and steam may feel strong.

Pour on Sheet

  • Pour the hot candy onto the parchment sheet. Spread lightly.

Let It Cool

  • Allow the candy to cool for one hour. Do not touch during cooling.

Break the Candy

  • Lift the sheet and break the candy into shards of any size.

Add Powdered Sugar

  • Dust powdered sugar on top. This keeps pieces from sticking.

Notes

  • Use a candy thermometer for best results.
  • Do not stir too much once it boils.
  • Add cinnamon oil only after removing from heat.
  • Add more food color for a deeper red shade.
  • Store candy in a dry place.
