Ingredients
  

  • 2 tbsp butter for greasing ramekins
  • 1/4 cup sugar for ramekin coating
  • 3 large eggs separated
  • 1/4 cup sugar for egg whites
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting

Instructions
 

Prepare ramekins

  • Grease ramekins with butter. Sprinkle sugar inside. Shake to coat evenly. Set aside while making the soufflé.

Make custard base

  • In a saucepan, heat milk. In another bowl, whisk egg yolks, flour and sugar. Slowly mix in hot milk.

Cook custard

  • Return mixture to pan. Stir constantly over low heat until thickened. Do not boil. Remove from heat.

Add vanilla

  • Stir in vanilla extract into the custard. Let it cool slightly before folding in egg whites.

Whip egg whites

  • In a clean bowl, whisk egg whites with salt until soft peaks form. Gradually add sugar for glossy stiff peaks.

Fold custard and whites

  • Gently fold custard into egg whites. Use a spatula and lift mixture to keep it airy.

Fill ramekins

  • Spoon soufflé mixture into prepared ramekins. Fill almost to the top. Smooth the surface gently.

Bake the soufflé

  • Place ramekins on a baking sheet. Bake at 375°F (190°C) for 18–20 minutes. Do not open oven.

Serve immediately

  • Remove from oven carefully. Dust with powdered sugar. Serve warm for best fluffiness and flavor.
