Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 1/4 cups oat milk
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions
 

Mix the dry ingredients

  • Add flour, sugar, baking powder and salt to a bowl. Whisk gently until fully combined without any lumps remaining.

Combine the wet ingredients

  • In another bowl, mix oat milk, egg, melted butter and vanilla. Stir well so everything blends into a smooth liquid.

Make the pancake batter

  • Pour wet mixture into the dry bowl slowly. Stir gently just until combined. Do not overmix to keep pancakes fluffy.

Heat the pan

  • Place a nonstick pan on medium heat. Lightly grease the surface with butter or oil for easy flipping and even browning.

Cook the pancakes

  • Pour batter onto the pan in small circles. Cook until bubbles appear and edges look set before flipping carefully.

Flip and finish

  • Turn pancakes gently with a spatula. Cook another minute or two until golden and fluffy on both sides, then remove.
