Ingredients
  

  • 2 cups cooked sweet potatoes mashed
  • 3 large eggs separated
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • Butter for greasing ramekins
  • Optional: powdered sugar for dusting

Instructions
 

Prepare ramekins

  • Grease ramekins with butter. Set aside to prevent soufflé from sticking while mixing ingredients.

Mash sweet potatoes

  • Ensure sweet potatoes are soft and smooth. Mash them well to remove lumps for a creamy base.

Mix egg yolks and sugar

  • In a bowl, whisk egg yolks with sugar until smooth and light. Add vanilla, milk, cinnamon and salt.

Combine sweet potatoes and yolks

  • Add mashed sweet potatoes to yolk mixture. Stir until fully incorporated and smooth.

Whip egg whites

  • In a clean bowl, whisk egg whites until stiff peaks form. This adds lightness to the soufflé.

Fold whites into sweet potatoes

  • Gently fold egg whites into sweet potato mixture. Use a spatula to keep mixture airy and fluffy.

Fill ramekins

  • Spoon mixture into prepared ramekins or baking dish. Smooth tops gently without deflating.

Bake the soufflé

  • Place in preheated oven at 350°F (175°C). Bake for 30–35 minutes until risen and golden on top.

Serve immediately

  • Remove from oven and serve warm. Dust with powdered sugar if desired. Enjoy fluffy texture.
