Ingredients

  • Unsalted butter – 100g softened
  • Sugar – 100g
  • Eggs – 2 large
  • Almond flour – 120g
  • All-purpose flour – 2 tbsp
  • Vanilla extract – 1 tsp
  • Almond extract – ½ tsp optional
  • Salt – a pinch

Instructions

Cream Butter and Sugar

  • Add softened butter and sugar to a bowl. Mix until light and fluffy. This step creates a smooth base. Make sure there are no lumps left in the mixture.

Add Eggs Slowly

  • Crack eggs into the mixture one by one. Mix well after each addition. This helps the batter stay smooth and prevents it from splitting during mixing.

Add Flavorings

  • Pour in vanilla extract and almond extract. Stir gently until combined. These flavors give frangipane its classic taste and sweet aroma.

Mix Dry Ingredients

  • Add almond flour, all-purpose flour and salt. Fold everything gently with a spatula. Do not overmix. The mixture should stay soft and slightly thick.

Prepare for Baking

  • Transfer the frangipane into a tart shell or baking dish. Spread it evenly using a spatula. Make sure the surface is smooth for even baking.

Bake the Frangipane

  • Preheat oven to 180°C (350°F). Bake for 20–25 minutes until golden on top. The center should feel set but soft when touched lightly.

Cool Before Serving

  • Remove from oven and let it cool. This helps it set properly. Serve warm or at room temperature for the best taste and texture.

Notes

  • Use room temperature butter for smooth mixing.
  • Do not overmix the batter. It can affect texture.
  • Use fine almond flour for best results.
  • Add sliced fruits on top before baking for variation.
  • Check doneness by lightly pressing the center.
